Showing Safale-04 the Door

I'm done with this yeast. I've heard lots of good things about it, but both beers I've tried it with have had significant problems. The first was a stout that didn't attenuate for crap. Granted, it fermented a little cold, but it was well over 60F the entire time. After a week, it dropped out and didn't do a thing more.

The second was a mutant amber that managed to ferment fully, but wound up with huge esters. Like big, germen hefe-style esters in early spring while fermenting well below 70F.

What's bizarre is that all this is supposedly contrary to the yeast's character. I've heard it described as dry, fast fermenting, and clean. Maybe there was a mix up at the factory? Regardless, I'm not going to buy any more of it. I'll probably give S-05 one chance, but I'm not optimistic. Anything I care about will get WLP001 or 1056, which so far have been the most forgiving of the less-than-accurate temps in my fermenting chamber (also known as "the basement bathtub").
